Tawari (Ixerba brexioides) is a New Zealand native tree. The tree grows to around 15 metres in height and has beautiful white / cream flowers. The flowers were highly prized by the Maori people who used them for necklaces and adornment during festive occasions. The honey is a light colour and is known as the beaujolais of honey due to its rich yet subtle flavour with overtones of butterscotch. It is very popular with dessert chefs as it is an ideal companion to fresh fruit platters as well as in sauces and fillings.
